Our First Courses
Among its selection of first courses, Nautilus proudly features its signature dish: Trapanese-style fish couscous. This dish is prepared according to ancient tradition, beginning with the hand-rolling of durum wheat semolina ('ncocciatura'), followed by slow steaming in a couscous pot (cuscusiera), and finished with a rich broth made from local fish.
Our menu would not be complete without the traditional Busiate pasta, carefully prepared by our kitchen. The most popular choice is Trapanese-style pasta with cherry tomatoes, almonds, basil, and Parmesan cheese.
Other highlights include Busiate with pistachio pesto and finely chopped red prawns, as well as Busiate Nautilus with swordfish, aubergines, and almonds.
